In 2023, Germany produced more than one kilogram of gingerbread per capita. A quarter of this was exported, reaching not only neighboring countries but also Australia.
High production and export of gingerbread in Germany
Germany produced 86,800 tons of gingerbread in 2023, which averages out to over one kilogram per person. This marked a slight decline of 1% compared to the previous year, according to the Federal Statistical Office. The production exceeded domestic consumption, with a quarter of the gingerbread, or 22,500 tons, being exported. In contrast, Germany imported 10,800 tons of gingerbread.
To ensure timely availability on store shelves, manufacturers begin production in the summer. In 2023, over one-third of all gingerbread was produced between July and September. Additionally, 90% of the exports occurred in the second half of the year, with 51% of these exports taking place in August and September.
Top export destinations for German gingerbread
Austria was the largest importer of German gingerbread, bringing in 4,500 tons. Poland and France followed, importing 4,100 and 2,600 tons, respectively. However, German gingerbread also reached beyond neighboring countries, with 400 tons being exported to Australia last year.
